Recipe
Crust/Topping:
- 3 cups flour
- 1 1/2 cups sugar
- Zest of 1 large lemon
- 1/2 cup unsalted sweet cream butter, cold and cubed
- 3 eggs, slightly beaten
Blackberry Filling:
- 4 cups blackberries, cut in half
- 1 tablespoon fresh squeezed lemon juice
- 1 tablespoon cornstarch
- 3/4 cup sugar
Instructions:
- Preheat the oven to 350 degrees and line a 9×13 baking dish (or a 9×9 for thicker bars) with parchment paper.
- In a standing mixer, combine the flour, sugar, and lemon zest.
- Add the butter and mix until crumbly.
- Use your fingers or a fork to break up the butter into smaller pieces and mix well.
- Add the beaten eggs and mix until a crumbly dough forms.
- Press half of the dough into the bottom of the baking dish and set aside.
- In a large mixing bowl, mix the blackberries, lemon juice, cornstarch, and sugar until well combined.
- Pour the blackberry mixture over the crust and spread it evenly with a rubber spatula.
- Crumble the remaining dough over the blackberry filling.
- Bake in the preheated oven for 35-40 minutes, or until the crumble is golden brown.
- Remove from the oven and let it cool completely.
