Place the chicken breasts in a bowl and cover them with buttermilk. Let them soak for at least 30 minutes or overnight in the refrigerator.
In a shallow dish, mix together the flour, paprika, garlic powder, salt, and black pepper.
Heat vegetable oil in a large frying pan or deep fryer to 350°F (175°C).
Remove the chicken from the buttermilk and let the excess drip off.
Dredge each chicken breast in the seasoned flour mixture, ensuring they are coated evenly.
Fry the chicken in the hot oil until it’s golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.
For the Waffles:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Preheat your waffle iron and lightly grease it.
Pour enough batter to cover the waffle iron and cook according to the manufacturer’s instructions until the waffles are golden brown and crisp.
