In a medium bowl, mix the breadcrumbs, 1 cup of Parmesan, and salt.

Cut each mozzarella stick in half for manageable sizes.

Prepare a shallow bowl with beaten eggs. Dip the cheese sticks in the eggs, ensuring they are fully coated. Let any excess egg drip off.

Roll the cheese sticks in the breadcrumb mixture, pressing to adhere and cover completely. For extra crunch, repeat the egg and breadcrumb coating process a second time.

Place the coated cheese sticks on a baking sheet, cover, and freeze for about 2 hours until they are firm.

Heat the vegetable oil in a large frying pan over medium heat. Fry the cheese sticks in batches until they turn a golden brown, roughly 1 minute per side.

 

Transfer the fried cheese sticks to plates. Sprinkle with the remaining Parmesan cheese and serve hot.
